The Miracle Of A Low-Carb (High Fat) Diet In Reducing Cholesterol!

Think of this as a public service post for those that are struggling to get their cholesterol under control.
I try to explain to people that the secret of reducing your cholesterol counts is to CUT BACK on CARBS
and folks just don’t get it.
I know so many people who minimize the amount of cheese and red meat they eat,
saying that they have to do it to reduce their cholesterol,
and then pig out on carbs.
Though I am facetious about it and make jokes about it
(mainly to make folks feel better because they like to
think of others worse off than them)
I have only had a above 200 cholesterol count
for 9 months of my life and that was in 1989.
I brought my count down from 214 to 17x
just by cutting out milk and cheese
and living on hummus and tuna.
(And for the record it was damn hard to find hummus
in California in those days!)
I also don’t take handfuls of Liptor (as I claim).

Here is the real story of my counts.
This is the 2nd time in my life that I have been on a strict low-carb diet.
The first time was in 2004, just a year after we got married. Deanna said I had got too fat and insisted that I had to go on a low-carb.
I had heard of low-carb. Somebody that I had worked with closely, in NYC, was put on one a few years earlier. I had claimed I could never do it because I love bread, rice, pies, chocolates, cakes …
But, Deanna said low-carb and given that we were still ‘newly married’ I didn’t want her denying me anything.
She told me what to do. I did. Weight started falling off. I even had bad breath for a couple of weeks, due to ketosis, the ONLY time in my life, THANK GOD, that I ever had bad breath — because I hate bad breath and people with it. One of my many foibles. I was so impressed I started reading up on Atkin.
I became a great Atkin devotee. Still am.
I was on that 2004 low-carb diet for about 2 to 3 years. Lost maybe 15 pounds. I was down to about 165 — roughly the weight I was when we got married.
Don’t remember how or why I stopped the low-carb.
My blood work was at its best when I was on low-carb.
So this is deja vu all over again. This time around I am more liberal with the low-carb. It is IMPOSSIBLE to be NO-CARB.
But NO bread, NO rice, No pasta, NO pies, NO chocolate, NO bagels, NO muffins, NO pancakes, NO cereal for 15 months.
I eat one packet of hot oat meal each day with LOTS of raisins. Stomach needs that.
Yes, I have 1/2 glass of diluted red wine a day. That is medicinal.
I eat a fair amount of fruit — mainly cantaloupe, grapes, raisins, prunes, strawberries and bananas. No canned fruit.
But, I eat cheese, ham, hot dogs, chicken, pork and BEEF with abandon.
I knew my cholesterol would be OK!
That is the miracle.
